Hawaiian Kona coffee is, as the name suggests, grown in Hawaii. Mount Hualalai and Mauna Loa are the two main locations where this coffee is harvested, and both are located in what is known as the Kona Districts. These coffee cherries are hand picked carefully in the months of August through January. Once picked, they are pulped quickly and put in fermentation tanks. From picking to being placed in the tanks all happens within a 24 hour stretch. Once the coffee is fermented, it is spread out to dry, a process that takes between 1 and 2 weeks. The parchment is then roasted and the result is pure Kona. But it takes 9 pounds to coffee cherries to make a single pound of roasted Kona. That's why it is so rare, and also why it is so expensive.
